In Italian gastronomy, pasta tells the story of the land. Northern Italy, with its lush pastures, is famous for rich, velvety cream sauces. Southern Italy (especially Naples and Calabria) relies on the sun-drenched trinity of tomatoes, olive oil, and fiery chili peppers—the legendary "Sugo all'Arrabbiata" (The Angry Sauce).
This dish is a modern culinary bridge. We take the "anger" of the South (chili and garlic) and tame it with the "elegance" of the North (cream). To crown this union, we introduce an Anatolian legend: Sucuk (Spicy Fermented Sausage). The result is a plate that is smoky, creamy, spicy, and utterly unforgettable.
This recipe relies on "Rendering"—using the flavorful fat released by the sausage to build the base of the tomato sauce.
THE PANTRY (For 2 Generous Portions):
The Foundation: 250g High-Quality Spaghetti.
The Red Base: 400g Canned Chopped Tomatoes (or fresh), 1 tbsp Tomato Paste (for depth).
The Velvet: 100ml Heavy Cream (to create the "Rosa" sauce).
The Crown Jewels: 8-10 slices of Sucuk (or Spicy Pepperoni), 3 Garlic Cloves (sliced thick).
The Heat: 3 tbsp Olive Oil, Salt, Thyme, generous Red Chili Flakes, and Freshly Cracked Black Pepper.
STAGE I: THE AL DENTE PREP & THE RENDER (15 Minutes)
The Pasta: Boil the spaghetti in salted water until "Al Dente" (usually 2 minutes less than the package instructions).
Liquid Gold: Before draining, reserve 1 cup of the starchy pasta water.
The Infusion: While pasta boils, heat the olive oil in a wide pan. Fry the Sucuk slices and Garlic slices until the sausage releases its red paprika oils and the garlic turns golden.
The Reserve: Remove the crispy sausage and garlic from the pan and set them aside for the final topping. Leave the red, flavor-infused oil in the pan!
STAGE II: THE VELVET INFERNO (10 Minutes)
The Base: In the same pan with the infused oil, fry the tomato paste for a minute to unlock its aroma.
The Simmer: Add the chopped tomatoes, chili flakes, and thyme. Let it bubble for 5 minutes.
The Bind: Pour in a splash of the reserved pasta water to loosen the sauce.
The Transformation: Lower the heat and stir in the Heavy Cream. Watch as the angry red sauce turns into a luxurious, creamy orange sunset. Simmer for 1-2 minutes.
STAGE III: THE MARRIAGE & THE CROWN
The Toss: Transfer the drained spaghetti directly into the sauce. Toss vigorously for 1 minute so the creamy sauce clings to every strand.
The Plating: Twirl the pasta onto a plate, building a high mound.
The Coronation: Arrange the crispy Sucuk and golden Garlic slices on top (as seen in the photo).
The Finish: Dust with a final storm of Freshly Cracked Black Pepper.
